Great Ideas for Your Thanksgiving Leftovers

Thanksgiving is over and now you have a ton of leftovers. Either you cooked the turkey or whomever did sent you home with a fridge full of goodies. In addition to turkey you may have items such as leftover stuffing and potatoes. Even cranberry sauce and gravy.
So just how do you go about making these leftovers into tasty new meals?

Well leftovers and new meals are nothing new. Here are some great ideas for using that leftover Thanksgiving Day fare.

Turkey - Leftover cooked turkey can be made into a number of tasty dishes. Really the meals are endless but here are a few good items to jog your memory.

Turkey Pot Pie - Some celery, carrots, onions and potatoes in a nice gravy under a delicious crust hit the spot for comfort food.

Turkey Noodle Soup. This time sauté your onions, carrots and celery. Add the chopped cooked chicken and some broth. Simmer a while and add uncooked noodles the last 30 minutes.

Turkey tacos. Use chopped turkey instead of beef in your family favorite taco recipe. We saute onions, and pepper then toss with cooked turkey to heat throughout. Served on flour tortillas with cheese and lettuce we love these.

Turkey stock. Set your leftover turkey bones in your slow cooker and cover with water. Cook on low all the day long. I've done this overnight. Very flavorful. Freeze in small containers to use later.

Potatoes - Leftover cooked potatoes make delicious second day servings.
Potato Pancakes. My mom made these all the time when we were growing up. Mix potatoes, an egg, a little flower and salt and pepper to taste (after cooking of course). Fry in a little oil. Don't deep fat fry. Pan fry.

Potato salad. This is great if you have leftover baked potatoes. Take them out of the skins and cube. Mix with celery, mayonnaise and relish (I like sweet) add an egg if that suits you.
If you have leftover sweet potatoes use them to make a yummy sweet potato pie. Much pumpkin pie it's smooth and sweet.

Gravy - Yes! You can use your leftover Thanksgiving gravy.
Use in your shepherd's pie or turkey pot pie recipe as part of the filling
Veggies

My sister absolutely hates leftover vegetables. I like them... I don't know why. Anyway puree them and use to make a thick healthy soup. Broccoli is my favorite. I don't make it difficult. I puree them and add chicken stock. Delicious first course. Tell your family they're having a fancy meal with several courses.

This should give you some great ideas to use up those Thanksgiving leftovers.
